Stuffed Spaghetti Squash
Stuffed Spaghetti Squash
Ingredients:
- 1 medium sized spaghetti squash
- 1 small onion
- 2 cloves garlic
- 2 Roma tomatoes, diced
- 1 tsp dried Basil or 1 tbsp fresh Basil
- 1 cup Cottage cheese or Ricotta cheese
- ½ cup Mozzarella cheese, grated
- ¼ cup fresh parsley
- ¼ tsp salt
Topping:
- ¼ cup Parmesan cheese, freshly grated or from bottle
- 3 tbsps bread crumbs
Directions:
- Cut squash in half (long ways)
- Bake squash with cut sides down on greased sheet for 30 minutes at 400˚, allow to cool
- Scrape out insides of squash
- In a separate frying pan, cook onion and garlic for 4-5 minutes.
- Add tomatoes and cook for 3-4 minutes till dry
- Add above mixture and remaining ingredients to squash and combine
- Place squash mixture in squash shells
- Cover with Parmesan and bread crumbs
- Bake for 30 minutes
