Stuffed Spaghetti Squash

 

Ingredients:

  • 1 medium sized spaghetti squash
  • 1 small onion
  • 2 cloves garlic
  • 2 Roma tomatoes, diced
  • 1 tsp dried Basil or 1 tbsp fresh Basil
  • 1 cup Cottage cheese or Ricotta cheese
  • ½ cup Mozzarella cheese, grated
  • ¼ cup fresh parsley
  • ¼ tsp salt

 

Topping:

  • ¼ cup Parmesan cheese, freshly grated or from bottle
  • 3 tbsps bread crumbs

 

Directions:

  1. Cut squash in half (long ways)
  2. Bake squash with cut sides down on greased sheet for 30 minutes at 400˚, allow to cool
  3. Scrape out insides of squash
  4. In a separate frying pan, cook onion and garlic for 4-5 minutes.
  5. Add tomatoes and cook for 3-4 minutes till dry
  6. Add above mixture and remaining ingredients to squash and combine
  7. Place squash mixture in squash shells
  8. Cover with Parmesan and bread crumbs
  9. Bake for 30 minutes
