Porcupine Meatballs
My Mother passed away this past January. I thought I would share one of her recipes. Just before I left home as a young adult my Mom sat me down with a stack of index cards and made me write out some fool-proof recipes. They were her go-tos that she knew I could easily make while living on my own. As I went through my many recipe cards the other day, I found this one that made me think of her. It’s funny how something like “Porcupine Meatballs” can bring on a flood of good memories. And trust me, if I can make this recipe, anyone can!
Ingredients:
- 3/4 lb ground beef
- 1 minced onion
- 2 tsp baking powder
- ½ cup milk
- ½ cup cooked rice or 1/3 cup uncooked rice
- Salt and pepper to taste
- 1 can tomato soup
Directions:
- Combine all ingredients except the tomato soup
- Form into balls and place in a casserole
- Pour can of tomato soup over meatballs
- Bake uncovered for 35 minutes at 325˚
- Cover and bake for another 30 minutes
