Mexican Quinoa Salad

Ingredients:

  • 2 cups quinoa
  • 3 ½ cups chicken stock (or water)
  • 2 cups bell pepper diced
  • 1 x 15 oz can black beans rinsed and drained
  • 1 cup frozen corn
  • 1 cup salsa of choice
  • 1 tomato diced
  • 1tbsp jalapenos
  • 1 cup red onion diced
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 cup fresh cilantro (garnish)
  • Avocado (garnish)
  • Lime to squeeze on top

 

Directions:

  • Add all ingredients (except cilantro, avocado and lime juice) into a large pot with a lid. Stir, cover and bring to a boil.
  • Once boiling, turn down to medium/low heat and cook covered for 15 minutes, or until liquid is completely absorbed.
  • Serve garnished with fresh cilantro, avocado and lime.
