Mexican Quinoa Salad
Ingredients:
- 2 cups quinoa
- 3 ½ cups chicken stock (or water)
- 2 cups bell pepper diced
- 1 x 15 oz can black beans rinsed and drained
- 1 cup frozen corn
- 1 cup salsa of choice
- 1 tomato diced
- 1tbsp jalapenos
- 1 cup red onion diced
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin powder
- 1 tsp garlic powder
- 1 tsp salt
- 1 cup fresh cilantro (garnish)
- Avocado (garnish)
- Lime to squeeze on top
Directions:
- Add all ingredients (except cilantro, avocado and lime juice) into a large pot with a lid. Stir, cover and bring to a boil.
- Once boiling, turn down to medium/low heat and cook covered for 15 minutes, or until liquid is completely absorbed.
- Serve garnished with fresh cilantro, avocado and lime.
