Japanese Salad

 

Ingredients:

  • ½ cup toasted almonds
  • ½ head shredded cabbage
  • 1 pkg bean sprouts
  • 2 cups fresh mushrooms
  • 2 green onions, chopped
  • ¼ cup sunflower seeds
  • 3 oz package instant noodles (ramen, broken up)
  • ½ pcg chow mein noodles

 

Dressing:

  • Seasoning pkg from the ramen noodles
  • ½ cup olive oil
  • 2-4 tbsp soy sauce
  • 3 tbsp vinegar
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp pepper

 

Directions:

  • Toast almonds and set aside.
  • Put cabbage, bean sprouts, mushrooms, onions and sunflower seeds in bowl.
  • Add toasted almonds.
  • Combine instant noodles and chow mein noodles in a small bowl and set aside.
  • Combine dressing ingredients and stir.
  • Pour dressing over salad.
  • Sprinkle dry noodles and chow mein noodles on top.

 

Variations:

  • Try adding romaine lettuce, Chinese cabbage, celery, cucumbers, shredded carrot, etc.
