Iowa Corn Chowder
Ingredients:
- 4 slices bacon, chopped
- 1 large onion, chopped
- 3 medium potatoes, chopped
- 2 ½ cups water
- 1 tsp salt
- ¼ tsp pepper
- ¼ – ½ tsp paprika
- 1/8 tsp celery salt
- Dashes of cayenne and cumin
- 2 cans whole kernel corn
- 1 2/3 cups evaporated milk (plain works also)
- ¼ cup flour
Directions:
- Cook bacon until crisp. Add onion and cook until soft.
- Add 2 cups of the water, potatoes, salt and pepper, and other spices. Cover and cook until the potatoes are done.
- Stir in the corn and milk.
- Mix the remaining ½ cup water and flour to make a paste in separate container. Add slowly to soup, stirring all the while.
- Stir until mixture bubbles.
- Turn to simmer and serve immediately.
