Iowa Corn Chowder

 

Ingredients:

  • 4 slices bacon, chopped
  • 1 large onion, chopped
  • 3 medium potatoes, chopped
  • 2 ½ cups water
  • 1 tsp salt
  • ¼ tsp pepper
  • ¼ – ½ tsp paprika
  • 1/8 tsp celery salt
  • Dashes of cayenne and cumin
  • 2 cans whole kernel corn
  • 1 2/3 cups evaporated milk (plain works also)
  • ¼ cup flour

 

Directions:

  • Cook bacon until crisp. Add onion and cook until soft.
  • Add 2 cups of the water, potatoes, salt and pepper, and other spices. Cover and cook until the potatoes are done.
  • Stir in the corn and milk.
  • Mix the remaining ½ cup water and flour to make a paste in separate container. Add slowly to soup, stirring all the while.
  • Stir until mixture bubbles.
  • Turn to simmer and serve immediately.
