Asparagus Stuffed Chicken Breast

 

Ingredients:

  • Boneless chicken breasts
  • Asparagus spears
  • Cheese slices (mozzarella, Swiss, provolone)
  • Sliced tomatoes
  • Fresh Basil leaves (optional)
  • Thinly sliced charcuterie meat (optional)
  • Spices – original recipe calls for:
    • 1 tbsp garlic powder
    • 1 tbsp Italian seasoning
    • 1 tbsp paprika
    • Salt and pepper
  • Spices – we used:
    • Montreal Chicken Spice
    • Oregano
    • Salt and pepper

 

 

Directions:

  • Cut breasts lengthwise butterfly-style, but not right through to create a pocket
  • Spice inside of breasts
  • Layer stuffing ingredients: asparagus, tomatoes, cheese (optional meat and basil)
  • Close pockets with toothpicks
  • Coat outside of chicken with spices
  • Bake in oven at 400° for 30-35 minutes
