Asparagus Stuffed Chicken Breast
Ingredients:
- Boneless chicken breasts
- Asparagus spears
- Cheese slices (mozzarella, Swiss, provolone)
- Sliced tomatoes
- Fresh Basil leaves (optional)
- Thinly sliced charcuterie meat (optional)
- Spices – original recipe calls for:
- 1 tbsp garlic powder
- 1 tbsp Italian seasoning
- 1 tbsp paprika
- Salt and pepper
- Spices – we used:
- Montreal Chicken Spice
- Oregano
- Salt and pepper
Directions:
- Cut breasts lengthwise butterfly-style, but not right through to create a pocket
- Spice inside of breasts
- Layer stuffing ingredients: asparagus, tomatoes, cheese (optional meat and basil)
- Close pockets with toothpicks
- Coat outside of chicken with spices
- Bake in oven at 400° for 30-35 minutes
